Buffet, plated or banana leaf

In Bangalore, leaf service suits the muhurtham lunch (courses in order, one server per 12 leaves, ₹350–₹750 a plate), a buffet with live counters suits the reception (one server per 25–30 guests, volume over three hours), and plated service suits a hotel-ballroom or Christian reception of up to 300 (one server per table, 15–20% more than a buffet for the same menu). Most Bangalore weddings use two of the three in one day.

Leaf

The leaf is a course structure disguised as a plate. Salt and pickle top left, then kosambari and palya, then the rice courses one at a time. A leaf served all at once is a thali, and the family notices. It needs many servers and a hall that turns quickly, and it is the cheapest format per plate because the food does the work.

Buffet

The buffet carries volume and the counters carry the experience. Its failure mode is time: a buffet that was hot at seven is a buffet at nine. Live counters, replenishment in small batches, and a floor plan that stops the queues crossing are what keep a 500-guest reception eating hot food at ten.

Plated

Plated service is a timing craft. Three hundred identical plates leaving a pass within minutes of each other, hot, is the Continental seat's speciality and the reason hotels sell it as their premium format. It costs 15–20% more than a buffet for the same food, all of it in staff.

Is plated service more expensive than a buffet?

Yes — 15–20% more for the same menu, because of one server per table and a pass crew. It buys timing and a seated room.

Can a banana-leaf lunch be served at a Bangalore hotel?

Usually yes. Most Bangalore hotels and convention centres allow leaf service; a few ballrooms prefer a leaf on a charger plate. We check before quoting.

How many servers does a 500-guest buffet need?

About 17–20 at one per 25–30 guests, plus a chef at each live counter.

What happens after you send the ticket

  1. A written reply, usually the same day. A first menu built for your occasion, the per-plate figure it comes to, and the two or three questions we need settled before the number is firm.
  2. A tasting. For weddings and events of size we cook the shortlist for you before you sign. Each cuisine on the menu is cooked by the chef who will cook it on the day.
  3. The plan for the day. Counters, service staff, timings against your muhurtham or your agenda, and the venue's rules on outside catering, checked with the venue by us.
