Enquire with the date, the expected count and the venue if you have one. A first menu and per-plate figure come back, usually the same day; the date is held against an advance.
4–3 months
The tasting, cooked by the chefs who will cook the wedding. Menu changes made here. The venue's outside-caterer rules and levy confirmed, in writing, from the venue.
8–6 weeks
Menu fixed for each function. Guaranteed count set, buffer agreed, staff ratio and counter list on the quote. Dietary lines — Jain, satvik, non-vegetarian — mapped to counters and servers.
4 weeks
Floor plan drawn with the venue and the decorator: buffet, counters, dessert table, water stations, the dining hall's turnaround for a leaf lunch.
72 hours
Final count. Purchases made against it; seafood and fresh produce on the morning.
The day
Tiffin seat at 3 am for a muhurtham morning. Leaf lunch in waves timed to the mantapa. Counters open when the couple arrive. The last wave is cooked last. The kitchen leaves when the venue is clear.
