The seat

The Bengali chef keeps two mustard oils and a bag of panch phoron that no other seat may borrow. Bhetki comes in on the morning and is filleted here.

The Bengali community in Bangalore's tech belt is large enough that a biye bari here should taste like one in Kolkata, and mostly it does not, because the kosha mangsho is cooked by a Punjabi hand and the fish is whatever the market had. The Bengali seat sources bhetki and chingri on the morning and cooks them in the two mustard oils the cuisine needs.

The order of courses matters — luchi and cholar dal first, then the bhaja, then the fish, then the meat, then the sweets — and the seat serves it in that order at a plated wedding, or arranges the buffet in it. Durga Puja and Poila Boishakh community lunches are the seat's other season.
