Pani puri, dahi puri, pav bhaji and Bangalore's own by the chaat seat

The chaat seat at RASA runs live street-food counters: pani puri with three waters, dahi puri, sev puri, ragda pattice, pav bhaji on the tawa, Delhi-style aloo tikki, Bombay vada pav, Kolkata kathi rolls and Bangalore's own masala puri and churmuri. A chaat counter at a Bangalore wedding adds about ₹120–₹250 a head in 2026.

The seat

The chaat chef makes the chutneys in the morning, fries the puris on site and keeps the pani cold on ice. Chaat is not a job for the North Indian chef "since the tandoor is there".

Chaat is the first counter to empty at every Bangalore wedding, sangeet and office party, and the one most caterers staff with whoever is free. The chaat seat is a chef whose only job is chaat: chutneys made that morning, puris fried at the counter, pani kept on ice, ragda hot. The Bangalore items — masala puri, churmuri — are on the counter because this is a Bangalore kitchen.

Chaat & Street Food catering in Bangalore — questions

Is the chaat counter live?

Yes — always. Puris are fried on site, pani is kept on ice, and every plate is assembled to order.

How much does a chaat counter add per head at a Bangalore wedding?

About ₹120–₹250 a head in 2026 for a full chaat counter; a pav bhaji or kathi roll counter added to it is ₹80–₹150 more.

Can the chaat be Jain?

Yes — a Jain chaat counter without onion, garlic or potato is a standard build; ragda and sev puri are rebuilt around it.

What happens after you send the ticket

  1. A written reply, usually the same day. A first menu built for your occasion, the per-plate figure it comes to, and the two or three questions we need settled before the number is firm.
  2. A tasting. For weddings and events of size we cook the shortlist for you before you sign. Each cuisine on the menu is cooked by the chef who will cook it on the day.
  3. The plan for the day. Counters, service staff, timings against your muhurtham or your agenda, and the venue's rules on outside catering, checked with the venue by us.
